Organoleptic characteristics

Millefiori honey can be divided into two macro-categories according to the period of production: - Light Millefiori honey: lighter and more transparent, with a more delicate, sweet and less intense flavour. It tends to crystallise a few months after harvesting and is produced in the spring, up to June-July.

- dark wildflower honey: dark or amber, it has a stronger flavour, with a more or less bitter aftertaste. It is very reminiscent of honeydew and chestnut. It tends to have a creamier consistency and crystallises more slowly. It is produced in late summer.
